Sweet and Crunchy Carrot Salad

A great refreshing salad , sweet and sour with a crunchy bite perfect for summer days. I served mine with grilled salmon but you can have it as a side dish to any fish or white meat.

I used :

  • 5 baby carrots
  • 1 apple 
  • 1 firm pear 
  • 1 mushroom sliced 
  • handful of baby spinach 
  • handful of wild rocket 
  • 1 lime ( we need the juice)
  • 1 tbsp of roughly chopped macadamia nuts
  • 1 tbsp toasted pine kernels 
  • salt 
  • pepper 
  • olive oil to drizzle 
In a food processor grate the baby carrots, the apple and the pear. You can use a normal grater but it will take longer ... yeah I'm lazy :) . Pour the result in a bowl and pour over it the lime juice ( this will prevent the fruit to oxidate ) add salt and pepper to taste and a drizzle of olive oil . Stir well to make sure every lil bit is glazed.

On a plate make a bed out of baby spinach and wild rocket add the grated mix, the slices of mushroom and sprinkle the nuts . And that's all enjoy it with your favourite meal :).
