Pan Seared Baby Scallops with Creamed Spinach

It requires about 10 minutes of your time and makes a delicious effortless meal.

For 2 servings you will need :

  • 150 gr baby scallops 
  • 2 spoons olive oil
  • salt,pepper
  • 2 cups chopped frozen spinach or about 200 gr fresh baby spinach 
  • 3 tbsp double cream 
Heat the oil in the pan add the baby scallops season with salt and pepper and sear for about 3 minutes on high heat, being small they won't need much. When ready get them out of the pan and add the spinach the cream salt and pepper and cover with a lid. Turn the heat to medium and cook for about 5 minutes and you'r done .

  1. I've had creamed spinach with a lot of things, but never scallops. Sounds fantastic though! I'll have to try it sometime!
