For this recipe you will need :
- 4 eggs
- 1 1/2 cup milk ( I used skimmed but any will do )
- 4 tbsp xylitol or any sweetener of your choice
- 1/2 tsp burbon vanilla paste
In a small sauce pan caramelise 2 tbsp of xylitol on medium heal making sure not to burn it. Coat the mini cake tins/ ramekins with it and set aside.
In a bowl beat the eggs with the rest of the sweetener, the milk and the vanilla paste. Pour the mix into the coated ramekins. Place them in a tray and fill that tray half way with boiling water. Bake for about 25 minutes at 180'C.
Let it to cook at room temperature and overturn the ramekins/ mini cake moulds on a plate. Serve cold.
This makes 4 servings as I used 2 mini cake tins and 2 ramekins . If you want to make it in a normal baking tray I recommend you to double the quantities.healthy desserts
