Stuffed Chicken Breast Wrapped in Prosciutto


  • 2 boneless skinless chicken breasts 
  • 50 gr stilton cheese ( any blue will do )
  • 1 tbsp creme fraiche
  • 50 gr mixed pitted olives
  • 4-5 prosciutto slices 
  • salt and pepper to taste 
 With a meat hammer gently tap the breast (careful not to break it) until flatten and about 1 finger thick. Dust with salt and pepper and set aside. In a bowl mix the creme fraiche  with the crumbled stilton and the chopped olives.

Split the cheese mix in half and spread it on the 2 chicken breasts. Roll them and wrap in the prosciutto. If you feel it won't hold the cheese mix inside you can pin some toothpicks to seal.

Bake in the oven at medium heat for about 35-40 min . Serve at room temperature with your favourite side dish.
