Stuffed Courgettes

Easy to make for those lunches when you are out of ideas.

For this recipe you will need

  • 4 courgettes ( from which 2 were globe courgettes )
  • 500 g extra lean mince beef
  • 150 g goat cheese 
  • 1 red pepper ( chopped, here i actually used 1/3 green pepper, 1/3 yellow pepper and 1/3 red pepper)
  • 1 shallot ( chopped )
  • 2 garlic cloves ( chopped)
  • 1 cup tomato paste 
  • 1/2 tsp dried oregano 
  • 1/2 tsp dried basil 
  • 2 tbsp olive oil 
  • salt, pepper to taste 
  • 1 bay leaf 
  • 2 kaffir lime leaves 
Wipe the courgettes with a damp cloth and cut them in two lengthwise. With a teaspoon carefully scoop  the inside. If you decide to use globe courgettes you will have to make a small hole at the top and again with a teaspoon scoop the inside. Keep some of the scooped courgette to mix with the filling and discard the rest.

In a pan heat the olive oil add the shallot and the garlic and cook for 2 min until the shallot gets translucent. Add the mince and the rest of the ingredients( except the goat cheese) and cook for 10 min on low heat .

Stuff the courgettes with the filling ( discard the bay leaf and the kaffir lime) put them on a tray lined with parchment paper and bake in the preheated oven at 180'C for 25-30 minutes. 5 minutes before the courgettes are done slice the goat cheese and place over the courgettes.

Serve warm or cold with your favourite salad and some tzatziki .
