For this recipe you will need
- 4 courgettes ( from which 2 were globe courgettes )
- 500 g extra lean mince beef
- 150 g goat cheese
- 1 red pepper ( chopped, here i actually used 1/3 green pepper, 1/3 yellow pepper and 1/3 red pepper)
- 1 shallot ( chopped )
- 2 garlic cloves ( chopped)
- 1 cup tomato paste
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 2 tbsp olive oil
- salt, pepper to taste
- 1 bay leaf
- 2 kaffir lime leaves
In a pan heat the olive oil add the shallot and the garlic and cook for 2 min until the shallot gets translucent. Add the mince and the rest of the ingredients( except the goat cheese) and cook for 10 min on low heat .
Stuff the courgettes with the filling ( discard the bay leaf and the kaffir lime) put them on a tray lined with parchment paper and bake in the preheated oven at 180'C for 25-30 minutes. 5 minutes before the courgettes are done slice the goat cheese and place over the courgettes.
Serve warm or cold with your favourite salad and some tzatziki .
