For this recipe we need :
- 1 cauliflower head
- 4 asparagus tips cut into chunks
- 1 red pepper sliced
- 1 shallot sliced
- 5 mushroom sliced
- 1 garlic clove
- salt and pepper to taste
- 1/2 tsp smoked paprika
- 1/2 tsp turmeric
- 1/2 tsp all spice
- 3 tbsp olive oil
In a pan heat the olive oil on medium-low heat and add the chopped garlic and the shallot and cook for 2 minutes until soft. Add the rest of the vegetable cover with a lid and cook for 5 min on low heat. Add the riced cauliflower, salt, pepper and the spices and cook for another 2-3 minutes on medium heat until the cauliflower gets soft but still firm.

For the non vegans ... or in my case for the non vegan days, add with the cauliflower a beaten egg and stir occasionally scrambling the egg. The result is delicious ( as shown in the 2nd picture ).
