Cauliflower "fried rice"

Perfect as a light healthy vegan meal to replace white rice which has a high carb content.

For this recipe we need :

  • 1 cauliflower head 
  • 4 asparagus tips cut into chunks 
  • 1 red pepper sliced
  • 1 shallot sliced 
  • 5 mushroom sliced 
  • 1 garlic clove 
  • salt and pepper to taste
  • 1/2 tsp smoked paprika 
  • 1/2 tsp turmeric
  • 1/2 tsp all spice
  • 3 tbsp olive oil 
Prepare the cauliflower by cutting it into florets and grating it in a food processor . You can use the S blade as well or even an old fashion grater.

In a pan heat the olive oil on medium-low heat and add the chopped garlic and the shallot and cook for 2 minutes until soft. Add the rest of the vegetable cover with a lid and cook for 5 min on low heat. Add the riced cauliflower, salt, pepper and the spices and cook for another 2-3 minutes on medium heat until the cauliflower gets soft but still firm.

For the non vegans ... or in my case for the non vegan days, add with the cauliflower a beaten egg and stir occasionally scrambling the egg. The result is delicious ( as shown in the 2nd picture ).
