Home Made Vegan Ice cream Fluff

This recipe is perfect when you crave ice cream and you want it fast. And what makes this even better ... it is a low carb guilt free dessert.

So lets start with the beginning. For this you will need

  • 1 ripe avocado 
  • 2 tbsp sweetener of choice or agave nectar or raw organic honey 
  • 1 tbsp vanilla extract 
  • 1 cup mixed frozen berries 
  • 2 tbsp full fat coconut milk 
Add the avocado to a food processor and pulse until smooth. Scrape the walls if you have to . Add the sweetener , vanilla extract and the coconut milk and blend. When they are smooth add the berries and pulse again. Serve your ice cream fluff immediately or if you want a harder ice cream consistency put it in the freezer for 5 minutes .
