Steamed Clams

For recipe you will need :

  • a dozen clams 
  • 1/2 bell pepper
  • 1 shallot 
  • 1 tomato 
  • 2 tbsp olive oil 
  • 1/2 cup of tomato puree/ paste 
  • 100 ml port 

Make sure all your clams are tightly closed. Discard any open clams that do not close when touched. This means they are dead. Rinse clams well under cold running water. Scrub with a firm brush if needed. Let sit in a bowl of lightly salted water for about 10 minutes so clams can purge themselves of any sand.

In a pan heat the oil. Chop the shallot and add it to the oil. Let it cook until it gets translucent, about 2 min on medium heat. Meanwhile chop the pepper and the tomato and add it to the pan. Cook for another minute stirring gently. Add the tomato paste and the port and let it simmer. Add the clams and cover with a lid. 

They will cook in about 2 minutes when all clams will open. You can serve it with your favourite low carb bread or crackers and freshly chopped dill. Enjoy xxx
