Avocado and Pear salad with Macadamia Nuts

Extremely easy to make and very fresh I had it as part of a " meatless banquet ".



Ingredients :

  • 2 ripe but firm avocados 
  • the juice from 1 lemon 
  • 1 pear 
  • 50 gr baby spinach 
  • 50 gr wild rocket 
  • 50 gr crushed macadamia nuts 
  • 30 gr toasted pine kernels 
  • salt and pepper to taste 
  • olive oil for drizzling 
Cut the avocados and the pear in chunks and squeeze the lemon juice on them. On a plate or a salad bowl make a bed out of the rocket and baby spinach. put the fruit chunks on top and sprinkle the nuts, drizzle the olive oil and season.
