To begin with you will need :
- 1 pack of shirataki noodles
- 1/2 carrot
- 1/2 parsnip
- 150 kidney beans
- 1 avocado
- chia seeds and chilly seed mix to top with
- 1 tsp mixed nut butter but any will do
- 1 tbsp toasted sesame oil
- juice of 1 lime
- 1-2 garlic cloves minced
- chilly powder to taste
- 1 tsp soy sauce
Make the carrot and parsnip into noodles using a mandolin or one of those vegetable noodle makers and set aside.
In a bowl make the marinade and stir in the noodles. Add the vegetable noodles, stir and cover with a cling film. Put it in the fridge to marinade for at least 30 min.
When the time is done add the kidney beans, the avocado cut into small pieces toss some chia seeds and the mixed chilly seeds and serve.
This is great as a meal or as a side and is packed with healthy nutrients and because of the shirataki noodles will keep you fuller for longer. More about these low calorie low carb noodles here
