Cauliflower crust pizza
I went to Borough Market yesterday and I got home with a bag full of goodies. I found some beautiful cauliflower and I struggled to choose a recipe in which to use it. I had a look thru my recipe notes and I decided on a cauliflower crust pizza to help with my junk food cravings.
I chose fresh tomatoes, wild mushrooms, cooked chicken breast, and mozzarella.
For the base you need :
• 1 medium sized cauliflower head ( I used half of the yellow cauliflower as it was a big one )
• 2 tbsp of grated parmesan
• 2 tbsp of grated emmental cheese
• 1 egg
• some dried herbs ( I used oregano and basil) and a pinch of onion and garlic powder
Preheat the oven to 180. Rice the cauliflower by placing florets in the food processor and pulse untill u get a rice consistency. Don't over do it or you will end up with a mushy paste.
Place the cauliflower rice in a bowl, cover with cling film and microwave on high for 3-4 minutes.
Leave it to cool a bit then place the rice in a clean tea towel and squeeze all the water from it. This is an important step and make sure you get all the moisture out of it or else the base will be soggy.
Put the the rice back to the bowl and mix with the rest of the ingredients. On a pizza stone or a baking tray lined with grease proof paper make a 1 inch thick pizza base out of the mix.
Bake for about 20 min until golden, then get it out and leave it to rest while u prep your toppings.
Place it back in the oven, for another 10 min or untill the mozzarella is melted and enjoy ;).

Lemony Seeded Muffins

Roasted Brussels Sprouts
Ok I know is Saturday night and I should probably be out parting like is no tomorrow :) but I'm not. I don't feel like it. I have a unexplainable certain mood. I get like this every autumn is a combo of depression, melancholy and a bit of laziness. Nothing to worry about it will go away soon it must be the weather and let me tell you that living in London it certainly doesn't help.

Simple, earthy pasta dish
Ok so I've been away for a month and lets say my eating was far away of being healthy or home cooked so since I'm back I'm trying to get back to my normal routine. London weather is moodier than me at the moment and because today it's been raining quite a bit I craved some comfort food. As I was way to lazy to go out and get some groceries for a proper Sunday roast I decided to make something with what I have in the fridge and cupboards. Stuffed Courgette Flowers
